Alkaline water is water that has been engineered to hold a pH above 7.0 typically between 8.0 and 9.5 either by running it through an electrolytic ionization chamber or by dosing it with food grade mineral salts. That's the short version. The longer version involves a lot more chemistry, a lot more engineering, and a surprising number of ways for a production line to get it wrong.
Tap water is close to neutral, usually pH 6.5 to 7.5 depending on the source. Consumer demand particularly from sports nutrition, wellness retail, and hospital nutrition programs has pushed hard toward water with elevated hydroxide ion concentration, measurably negative ORP, and a documented mineral profile. That demand is real, it's growing, and it has real engineering consequences.
Two production routes handle the bulk of industrial output. Electrolytic ionization splits water molecules using direct current across a semipermeable membrane, pushing hydroxide ions to the cathode side and producing alkaline water on one end, acidic water on the other.

The functional beverage market has largely moved past vague wellness claims. Alkaline water benefits that have been studied include acid buffering capacity during high intensity exercise relevant for athletes generating significant lactic acid load and improved hydration markers linked to smaller water cluster size. Whether every claim in the wellness space holds up to scrutiny is a different debate.
But those benefits only exist in the bottle if the pH held. A product that left the facility at pH 9.0 and arrived at retail at 7.4 didn't deliver alkaline water benefits to anyone. The consumer won't know why. They'll just stop buying it. That's not a marketing problem. The fix lives on the production floor.
